What’s for Breakfast?
When you are looking for a refreshing way to start your day, apple muesli is a perfect choice. Loaded with fiber-rich apples and almonds and sweetened with raisins, what is not to love? I am not usually a raisin fan but because this is such a quick fix, the raisins don’t have time to plump into that creepy texture. They just add the perfect punch of sweet.
This Thanksgiving, after we had stuffed ourselves silly, the next morning my brother-in-law prepared this delicious apple muesli. Truthfully, anything that can keep the pipes moving after such a heavy meal is welcome in my book. It was delicious.
Seconds Please
My son asks for this regularly which I love because it is quicker than preparing Cream of Wheat cereal. Unfortunately, he is not a big breakfast fan, but he does enjoy this energy-packed start to his day. He even asks for seconds. It is also a guilt-free snack in the middle of the afternoon. Apple muesli is a sugar-free recipe you can feel good about, it is super easy and quick to prepare, and it is loaded with tons of healthy, fiber-rich ingredients that give you a healthy start to your day. This recipe can be doubled or even tripled for a big crowd, but as I said above, you are risking the creepy raisin texture thing. Try it sprinkled with my Homemade Granola on top for a little pop of special.
Recipe for Apple Muesli
Apple Muesli
Refreshing and light, yet hardy and healthy. Apple Muesli is a fantastic start to your day especially after a few days of heavy.
Ingredients
- 3 Granny Smith or Honeycrisp apples (or whatever is your favorite apple variety)
- 1/4 cup raisins
- 1/2 cup almonds
- Juice of 1/2 lemon or orange (about 2-3 tsp)
- pinch of sea salt
- 1 tsp. cinnamon or pumpkin pie spice
Instructions
- Wash, core, and quarter apples and toss in a food processor. Make sure and remove those irritating little produce stickers...just say'n.
- Add additional ingredients and process until desired consistency.
- Seriously, that's it.
