The World’s Smallest Salad Recipe
I believe this is the world’s shortest recipe. Don’t blink or you will miss it. In spite of its small stature, it packs a powerful punch. Not only is this parsley-mint salad refreshingly cleansing (it makes a great palette cleanser as well as digestive aide), but it is loaded with powerful antioxidants, vitamins and minerals. Rich in Vitamin K and calcium for bone and blood health, which greens are known for, as well as aiding in digestion and masking bad breath. You can’t go wrong with this little side salad.
In our home, I prepare this salad whenever we have a heavy meal. Interestingly, parsley and mint are known for helping aid in digestion, plus the cleansing flavor breaks up the heaviness of any meal. Truthfully, preparing parsley-mint salad seems too simple to be tasty, but it truly is a delicious side to any meal.
Recipe for Parsley-Mint Salad
- 2 bunches of fresh, flat-leaf or curly parsley, chopped
- 1 bunch of fresh mint, chopped
- 1 lemon, juiced (about 1 Tablespoon juice)
- 3 Tablespoons extra virgin olive oil
- sea salt and pepper to taste
If You Want to Take It Up a Notch
